There are two complaints we typically hear when suggesting meal prep.
“I need variety” and “I don’t know what I’ll want to eat on Thursday when it’s Sunday”.
However, the point is not to predict what you’ll want to eat on a given day nor is it to eat tasteless food.
The point is to do something to simplify your life, and eat a tasty AND nutritious meal. The saving money aspect doesn’t hurt either ;)
Answer this, do you really “need variety” or are you scared you’ll be stuck eating nasty food? And if you cook something you like you won’t be worried about not wanting it in a few days.
If you spend your lunch stuck at a desk, or you have limited time while trying to balance kids at home, batch cooking is where it’s at!
This Sunday we decided to bake some chicken breast, and pair it with quinoa. For a side you could eat some cut up veggies, a salad, or even some fruit that you enjoy. You prepare a large batch and just split it up. Easy day.
This recipe we used for the chicken is tasty! Now that it’s prepped, we are ready for the week ahead. Because running a business with a 4 year old & newborn is time consuming in itself.
